About the dish:

Fakkes Soup, also known as Greek Lentil Soup, is a hearty and nutritious dish made with lentils, vegetables, and aromatic herbs. This soup is a staple in Greek cuisine and is enjoyed throughout the year. Fakkes Soup is a comforting and nourishing dish packed with protein and fiber from the lentils, and a medley of flavors from the vegetables and herbs. It is a perfect option for a nutritious meal that will keep you warm and satisfied. Here's a recipe to make Fakkes Soup:

Recipe:

  1. Rinse the lentils under cold water and remove any debris or impurities.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion, diced carrots, and diced celery. Sauté the vegetables for about 5 minutes or until they begin to soften.
  3. Add the minced garlic, bay leaf, and dried oregano to the pot. Cook for an additional minute to release the flavors.
  4. Add the rinsed lentils to the pot and stir them to coat them with the aromatic vegetables and herbs.
  5. Pour in the vegetable or chicken broth and water. Stir well to combine all the ingredients.
  6. Bring the soup to a boil, then reduce the heat to low and cover the pot. Let the soup simmer for about 30-40 minutes or until the lentils are tender.
  7. Once the lentils are cooked, remove the bay leaf from the pot. Use an immersion blender or a regular blender to partially puree the soup to your desired consistency. You can leave some lentils whole for texture or puree the soup completely for a smoother consistency.
  8. Stir in the lemon juice and season the Fakkes Soup with salt and pepper to taste.
  9. Serve the soup hot, garnished with fresh parsley if desired. It can be enjoyed as a starter or as a wholesome main course.
