Our family produces Extra Virgin Olive Oil (EVOO) in Southern Sparta, Greece. We handpick our Koroneiki olives in stages, ensuring they reach perfect ripeness, a delicate harvesting process that takes over three months. Once picked, the olives are immediately cold-pressed and bottled to preserve all the beneficial nutrients. We only bottle olive oil with an acidity level between 0.3% and 0.4%, which is ideal for flavor. Our EVOO is well-known and proudly used in some of Boston's top restaurants.
